Sweet potatoes are absolutely delicious and can be a little bit underrated, but they’re something that I think deserves to have a bit more visibility as a side dish. And making this recipe is so easy and quick that you’re sure to be making them at every opportunity.

One of the great things about this recipe is that it’s somewhat deceptively impressive. The use of cumin and smoked paprika elevates the dish so that it feels fancy enough to serve as a side dish on a Thanksgiving table (perhaps alongside some green beans or butternut squash) but it’s simple enough to make on a busy weeknight.

The first step to this recipe is to dice your sweet potatoes.

I, personally, don’t bother peeling sweet potatoes because a) I like the texture and flavour the peel provides and b) often, I’m a bit lazy and it’s an extra step I don’t necessarily want to do on a busy night. I just make sure I’ve thoroughly washed and dried my potatoes and dice away.

Cut your sweet potatoes into 2-centimetre-wide cubes and then add them to a large mixing bowl. Then, to the bowl, drizzle over a bit of high-quality olive oil.

Season the potatoes generously with a few good grinds of freshly ground black pepper (never pre-ground!) and a few pinches of salt.

Then, add your spices. First, add a good amount of ground cumin. I also find that smoked paprika goes incredibly well with cumin so I add this in here, as well. If you don’t have smoked paprika, then regular, sweet paprika will work fine, too.

Another great option is sweet potatoes with cumin and chili powder if you don’t have or don’t want to use paprika. Or, go ahead and throw all three in and your potatoes will still taste good!

Stir all of these to combine and to ensure that the spices and seasonings are evenly distributed over the potatoes.

Then, spread the potatoes out over a baking sheet that’s been lined with parchment paper.

Move the sweet potatoes to a preheated oven and roast them until they are browned around the edges and tender when pricked with a fork.

This will take about 15-20 minutes depending on your oven and the size of your potatoes. Then, serve them immediately and enjoy – they’re particularly good dipped in chipotle mayo!

Ingredients
 

  • 2 medium sweet potatoes washed and cut into 1/2-inch (1cm) pieces
  • 2 tbsp extra virgin olive oil
  • 2 tsp ground cumin
  • 1 tsp smoked paprika

Instructions
 

  • Preheat oven to 425°F (220°C). Line a large baking tray with parchment paper.
  • Add the sweet potatoes to a large mixing bowl. Pour over the olive oil and add the cumin and smoked paprika. Season generously with salt and pepper. Toss until the spices are evenly distributed

  • Transfer the potatoes to the prepared baking dish, ensuring they are scattered in an even layer. Move to the oven and roast until browned at the edges and fork tender, about 15-20 minutes. Serve immediately.
