This is one of those recipes that just came to me in a stroke of inspiration, when I was just brainstorming something different to do with salmon.

And I must say that I’m super thrilled with the results. It’s a super simple preparation but it is completely packed with flavour and absolutely perfect if you’re after a healthy meal for a busy weeknight.

All I do is brush some salmon fillets with a simple honey, soy and ginger glaze and then throw them in the oven until they’re cooked – nothing else is needed!

How to Make Ginger, Soy & Honey Salmon

There aren’t a tonne of ingredients required to make this recipe, nor is a lot of time required, so it’s really perfect for those busy nights.

Start first by preheating your oven to 180°C/350°F. Pat your salmon fillets dry with paper towels, set it on a parchment-lined baking tray and season generously with salt and pepper.

Then, set aside as you get the glaze together.

The glaze is all just combined in one bowl. So, to that bowl, grate in a bit of fresh ginger. Then, pour over some soy sauce, add a squeeze of honey, a splash of rice wine vinegar and a bit of toasted sesame oil.

I also like to add in some sesame seeds, a pinch of chili flakes and grate in a couple of cloves of garlic. Whisk all of this together until everything is thoroughly combined.

Now, all you need to do is use a pastry brush to coat the salmon in the glaze. Once the fillets are completely coated, go ahead and put them in the oven!

Cook the salmon until the glaze is golden and sticky and the interior of the fish registers at 50°C/125°F when an instant-read thermometer is inserted into the thickest part of the fillet. This generally takes about 15-20 minutes.

Let the fish rest for at least 5 minutes before serving. I find that this dish goes great alongside something like my scallion brown rice.
