If you’re after a super delicious and easy side dish to serve for any occasion, then these sliced sweet potatoes are an excellent choice.

A bit different in presentation and flavour when compared to my sweet potatoes with cumin and paprika and different in texture than my mashed sweet potatoes, this is yet another great way to enjoy this versatile root vegetable.

Requiring only about five minutes in active prep time, these potatoes are a high-impact, low-effort side dish that are absolutely delicious when topped with a bit of chipotle mayo or served alongside something like my braised portobellos or black bean patties.

How to Make Oven-Baked Sliced Sweet Potatoes

Start by prepping your sweet potatoes – all you need to do is slice them thinly. I don’t even bother peeling them as I like the texture that the peel adds – just make sure they’re well scrubbed.

You can use a mandoline to make extremely quick work of slicing the potatoes or you can opt to do it by hand – it’s up to you. Just try to ensure that they’re of an even thickness.

Once sliced, add them to a bowl and drizzle with a bit of olive oil and season generously with salt and pepper. Then, sprinkle over a bit of cornstarch. This helps make the sweet potatoes crispy and is a good addition to the recipe.

Then, add a bit of chili powder and a pinch of ground cinnamon. Mix everything together and ensure the potato slices are all evenly coated.

Transfer the potatoes to a parchment-lined baking sheet and spread them out so they are in a thin, even layer.

Then, move them to a 220°C/425°F oven and roast for about 20-25 minutes – just until the potatoes are crisp and fork tender.

Then, all you need to do is serve and enjoy!

  • Preheat oven to 220°C/425°F. Add the sliced sweet potatoes to a large bowl. Drizzle with 1 tbsp of olive oil and season generously with salt and pepper. Sprinkle over the cornstarch, chili powder and cinnamon and stir until evenly coated.
