I have no shortage of simple fish recipes on this website, and I’m a huge fan because they pack a lot of flavour but can be on the table in about 30 minutes.

This cod recipe falls into that category. Baked in a foil packet and topped with a simple lemon, garlic and herb butter, it’s quick, easy and delicious.

How to Make Lemon & Herb Cod in Foil

You can prep this whole dish in 10 minutes, and even that is being generous – and that’s all of the active time required.

Start by seasoning your fish with some salt and pepper and then setting it aside. Then, get the herb butter together.

This is most easily done with room temperature butter because fridge-cold butter will be very difficult to mix adequately.

To your butter, grate in a couple of cloves of garlic. Add some chopped fresh parsley and oregano, along with a bit of lemon zest. I also like to add in some chopped capers for both saltiness and a touch of acidity. Mix all of this together until well combined.

Now, it’s time to assemble your fish packets (something we’ve done in recipes like my baked snapper).

Place a fish fillet on a large piece of aluminium foil. Spread the herb butter over the fish and then tightly crimp the foil around it.

Repeat this with the other fish fillet and then place the packets on a rimmed baking tray. Move them to a 180°C/350°F oven and bake until the internal temperature of the fish registers at 60°C/140°F on an instant-read thermometer (you can temp the fish by piercing through the foil to avoid prematurely uncrimping). This will take about 10-15 minutes, depending on the thickness of the fish.

Once the fish is done, go ahead and let it rest for about 5 minutes before uncrimping and serving – I like squeezing over a bit of lemon for some brightness and acidity.

Ingredients
 

  • 350 g (12 oz) cod fillets or other firm white fish (2 fillets)
  • 45 g (3 tbsp) unsalted butter room temperature
  • 2 cloves garlic grated or finely minced
  • 2 tbsp flat-leaf parsley chopped
  • 2 tbsp capers rinsed & roughly chopped
  • 2 tsp lemon zest
  • 2 tsp fresh oregano chopped
  • lemon wedges for serving

Instructions
 

  • Preheat oven to 180°C/350°F. Pat the fish dry with paper towels, season generously with salt and pepper and place on 2 separate large sheets of aluminium foil.
  • To a medium bowl, add the butter, garlic, parsley, capers, lemon zest and oregano. Season with salt and pepper and mix until everything is well incorporated.

  • Spread the herb butter evenly over the fish fillets. Crimp the foil around the fish and place both foil packets on to a rimmed baking tray.

  • Move to the oven and bake until the internal temperature of the fillet measures at 60°C/140°F – about 10-15 minutes. Allow to rest for 5 minutes in the packet before serving, preferably with a squeeze of lemon.
