Chocolate and peanut butter are one of my absolute favourite combinations (see my scotcheroos recipe if you agree with me!), so these peanut butter balls are right up my street.

They also happen to be very simple to make and you can be enjoying them in under 2 hours – and the vast majority of that time is inactive.

Contrary to typical recipes like this, this one swaps powdered sugar for ground speculoos biscuits, giving the balls a nice crunch and craveable texture. Dipped in melted chocolate, they’re the perfect sweet treat for any occasion – whether that be Christmas or just an ordinary day.

How to Make Peanut Butter Balls Without Using Powdered Sugar

There are only five ingredients in this recipe – and it’s amazing how delicious it ends up being regardless of that!

To get your ducks in a row, begin by grinding your biscuits – I like using speculoos (Lotus Biscoff) biscuits here because I think that the flavour really translates well with the peanut butter.

I grind them in the food processor for efficiency’s sake, but you can also bash them in a bag with a rolling pin if that’s all you have (and it’s a good way to relieve some frustration!).

Once that’s done, go ahead and add your peanut butter to a large mixing bowl along with some sugar and a bit of salt. Use a hand mixer (or just a whisk and some elbow grease) to mix this all together until everything is combined and the peanut butter is aerated.

Then, add in your ground biscuits and use a large flexible spatula to fold everything together.

Now, it’s time to portion the balls! I like using a cookie scoop for this, but you can just use a tablespoon, as well.

Portion the mixture out onto a parchment-lined baking tray and then move the tray to the freezer for 1 hour.

When you’re ready to finish the peanut butter balls, go ahead and melt some chocolate. Chop a block of milk chocolate and bring a bit of water up to a bare simmer.

Add two-thirds of the chocolate to a heatproof bowl and set it over the boiling water, ensuring that the water is not touching the bowl.

Stirring occasionally, gently melt the chocolate until it’s completely smooth. Then, remove it from the heat and stir in the remaining one-third of the chocolate, stirring until that is completely melted, as well.

Now you’re ready to dip!

Remove the peanut butter balls from the fridge and coat each one completely in the chocolate, setting on a parchment-lined tray once done.

Then, move them all back to the fridge and let them set for at least fifteen minutes before serving. Note that, in an airtight container, they will actually keep in the fridge for roughly two weeks.

Ingredients
 

  • 300 g (1 cup) creamy peanut butter (see note)
  • 50 g (¼ cup) caster sugar or granulated sugar
  • ¼ tsp salt
  • 125 g (4 ½ oz) Lotus Biscoff biscuits ground to a fine powder
  • 200 g (7 oz) milk chocolate finely chopped, divided.

Instructions
 

  • Add the peanut butter, sugar and salt to a large mixing bowl. Using a hand mixer (or a whisk and some elbow grease), mix on medium speed until well combined and aerated, scraping down the sides as needed.

  • Use a large, flexible spatula to fold in the ground biscuits. Stir until well combined and the mixture resembles a dough.

  • Line a baking tray with parchment paper. Using a spoon or a cookie scoop, portion the peanut butter mixture into tablespoon-sized spheres. Place each ball on the baking tray and move to the freezer for 1 hour.

  • When ready to finish, add ⅔ of the chocolate to a large, heatproof bowl. Set the bowl over some barely simmering water, ensuring the bottom of the bowl does not touch the water. Stirring occasionally, gently melt the chocolate. Remove from the heat and stir in the remaining chocolate, stirring until everything is melted and smooth.

  • Remove the peanut butter balls from the freezer. One by one, dip the balls in the chocolate, using 2 forks to ensure they are fully coated. Place the coated balls back on the tray and refrigerate until set – about 15 minutes. Allow to come to room temperature before serving.

Notes

Use standard, homogenised peanut butter (such as Skippy, Jif or Bega) rather than natural peanut butter for best results.
Make Ahead
Refrigerated, the peanut butter balls will keep in an airtight container for up to 2 weeks.
