In a large, zip-top bag, combine olive oil, lime zest and juice, garlic, cilantro, salt and pepper. Seal the bag and squish around to combine.
Add the salmon fillets to the bag, seal, and ensure the marinade is covering the fish. Transfer to fridge and allow to marinate for no longer than 30 minutes. While the salmon is marinating, preheat oven to 180°C (350°F).
Remove salmon from the marinade, allowing the excess marinade to drip off before transferring to a parchment-lined baking sheet.
Move salmon to the oven and cook until the internal temperature measures 50°C (125°F), about fifteen minutes. Allow the fish to rest for five minutes before serving and enjoying.
