Peanut Sauce Without Soy Sauce

This peanut dipping sauce goes fantastically well with fresh rice paper rolls or fried spring rolls. It also uses no soy sauce!

Ingredients

90 g (⅓ cups) natural peanut butter (see note 1)
1 clove garlic grated or very finely minced
1 tbsp fish sauce
2 tsp dark brown sugar packed
2 tsp sriracha
2 tsp rice wine vinegar
½ tsp toasted sesame oil

Instructions

Add all ingredients to a medium bowl along with 60ml (1/4 cup) water. Mix until well combined, adding more water to reach desired consistency. Serve immediately at room temperature.

Notes

Use a smooth or semi-smooth peanut butter - do not use crunchy peanut butter.

Make Ahead

Store in an airtight container in the refrigerator for up to 5 days. The sauce will thicken considerably when cold; stir in a small splash of water, a teaspoon at a time, before serving to loosen it to your preferred consistency.
