In a large mixing bowl, mash the beans using a potato masher until 2/3rds are mashed and 1/3rd remain whole. Add the shallot, cilantro and chipotles
In a small mixing bowl, whisk together eggs, garlic, lime zest and juice, cumin and salt.
Pour the wet ingredients into the bean mixture. Stir until well combined. Dust the panko breadcrumbs over the bean mixture and stir until just incorporated.
Divide the bean mixture into 4 equal patties and form them with your hands.
Add one tablespoon of neutral oil to a large skillet set over medium-high heat. Heat until shimmering and add the burgers. Cook on one side for five minutes before flipping and cooking for another five minutes. Serve immediately.

For best results, measure salt by weight, as different salts vary in crystal size and density.
Make Ahead
The uncooked patties can be wrapped individually in plastic and refrigerated for up to 3 days and frozen for up to 3 months. Defrost overnight in the fridge and cook as directed.
